Raw Goodness: Healthy Alternatives for the Holidays

But­ter­nut Squash Soup

Ingre­di­ents:

1 1/2 cups water
2 cups but­ter­nut squash, diced
4 ribs of cel­ery
2 table­spoons of tahini
1 sweet onion
1 clove of gar­lic
2 table­spoons of fresh gin­ger
1/2 cup thyme
1/2 tsp. sea salt
1/2 tsp. paprika

Prepa­ra­tion:

Blend the water and half of the but­ter­nut squash. Add pro­gres­sively the other half as well as the rest of the ingre­di­ents and blend. Gar­nish with paprika.  Warm slightly and serve.

 

Raw Mashed Pota­toes Alternative

Ingre­di­ents:

1 1/2 cups chopped cau­li­flower
1 1/2 cups chopped parsnips
1–2 table­spoons cold-pressed olive oil
3 table­spoons nutri­tional yeast
1 tea­spoon sea salt
1/2 tea­spoon black pep­per, or to taste
1/2 tea­spoon miso
1/2 tea­spoon thyme

Prepa­ra­tion:

Place all of the ingre­di­ents into a food proces­sor fit­ted with the S-blade and process for 30 sec­onds or until you reach the con­sis­tency you’re happy with. Serve imme­di­ately or set aside at room tem­per­a­ture. If refrig­er­ated, you may wish to warm up your mashed cau­li­flower and parsnips slightly in a pan over low heat before serving.

Cran­berry Sauce

Ingre­di­ents:

1 orange
2 cups fresh cran­ber­ries
1 apple
1 cups dates
1 table­spoon of fresh lemon juice
1/2 tea­spoon of ginger

Prepa­ra­tion:

Process cran­ber­ries, orange, apple and dates in a blender.  Add water as needed for desire con­sis­tency. Serve chilled.

 

Raw Sweet Pota­toes Alternative

Ingre­di­ents:

2 – 3 sweet pota­toes
2 apples
1/4 cup gin­ger root
1/2 cup dried coconut
1/4 cup apple juice sweet­ened dried cran­ber­ries
4 lemons juiced
2 oranges, juiced
1/2 cup chopped wal­nuts (optional)
1 table­spoon cinnamon

Prepa­ra­tion:

Peel and grate sweet pota­toes, apples, and gin­ger into a large bowl.  Add shred­ded dried coconut, lemon and orange juices, and chopped wal­nuts (optional). Mix and sprin­kle with cinnamon.
