Raw Goodness: Healthy Alternatives for the Holidays
Butternut Squash Soup
Ingredients:
1 1/2 cups water
2 cups butternut squash, diced
4 ribs of celery
2 tablespoons of tahini
1 sweet onion
1 clove of garlic
2 tablespoons of fresh ginger
1/2 cup thyme
1/2 tsp. sea salt
1/2 tsp. paprika
Preparation:
Blend the water and half of the butternut squash. Add progressively the other half as well as the rest of the ingredients and blend. Garnish with paprika. Warm slightly and serve.
Raw Mashed Potatoes Alternative
Ingredients:
1 1/2 cups chopped cauliflower
1 1/2 cups chopped parsnips
1–2 tablespoons cold-pressed olive oil
3 tablespoons nutritional yeast
1 teaspoon sea salt
1/2 teaspoon black pepper, or to taste
1/2 teaspoon miso
1/2 teaspoon thyme
Preparation:
Place all of the ingredients into a food processor fitted with the S-blade and process for 30 seconds or until you reach the consistency you’re happy with. Serve immediately or set aside at room temperature. If refrigerated, you may wish to warm up your mashed cauliflower and parsnips slightly in a pan over low heat before serving.
Cranberry Sauce
Ingredients:
1 orange
2 cups fresh cranberries
1 apple
1 cups dates
1 tablespoon of fresh lemon juice
1/2 teaspoon of ginger
Preparation:
Process cranberries, orange, apple and dates in a blender. Add water as needed for desire consistency. Serve chilled.
Raw Sweet Potatoes Alternative
Ingredients:
2 – 3 sweet potatoes
2 apples
1/4 cup ginger root
1/2 cup dried coconut
1/4 cup apple juice sweetened dried cranberries
4 lemons juiced
2 oranges, juiced
1/2 cup chopped walnuts (optional)
1 tablespoon cinnamon
Preparation:
Peel and grate sweet potatoes, apples, and ginger into a large bowl. Add shredded dried coconut, lemon and orange juices, and chopped walnuts (optional). Mix and sprinkle with cinnamon.
